Frozen Strawberry Daiquiris

Frozen drinks are one of my favorite things to make, and drink, in the summer. I’m not a person who likes being overly hot and am always looking for ways to cool off, especially since moving back to the East coast! These frozen daiquiris are perfect to cool off this summer and for a little bit of fun! And yes, there are that many i’s in the word daiquiris…

I always like to assemble my ingredients before making our recipes. It makes the overall process so much easier, when I’m not worried about chopping something, or slicing something. Anything that needs to be measured out, I simply set aside and keep the measuring cups and spoons close by for a quick addition while completing recipes. This recipe’s ingredients were easy to gather, as I only had to cut up strawberries. These berries were picked from a local-ish orchard and the honey was a gift from a family friend. He knows how much I want to (successfully) raise bees and he was happy to share his own bee’s honey with us here at Tin Box! I just love this community!

Next up is simply pouring all of these ingredients into the blender. Yes, it will almost completely fill your blender. That’s ok!

Blend it all up and pour into freezer-safe containers. I used canning jars for mine. They make canning jars that are both freezer ready specifically, but I used a mix of both kinds. It is ok to not specifically use freezer jars, just make sure you leave plenty of room at the top. The mixture will expand as it freezes. Alcohol does not completely freeze, but the other ingredients will harden and expand.

I try to make these types of recipes while Jorge is home. My husband is a great taste-tester. While he won’t admit it, he really enjoys being a part of things. Before pouring the mixture into jars, I pour him a small glass to test out and give me his critique. Who will help you taste test your recipes?

Once you have the final jars poured, it is time to place in the freezer. I suggest making these at least a day ahead of when you actually need them, but they are great to make weeks ahead to get a jump on activities and planning. When you are ready to enjoy this cold treat, just pull one out and let thaw for about 10 minutes. I like to stir up a bit and drink strait from the jar.

Not a big strawberry person? That’s ok! You can use other fruits, we just suggest staying away from blackberries and raspberries with the high seed content. They make for some gritty drinks.

Frozen Strawberry Daiquiris

This make ahead cocktail is perfect for any hot summer day!

Ingredients
  

  • 6 oz frozen limeaid concentrate
  • 6 oz light rum
  • 4 cups frozen strawberries
  • 2 cups ice cubes

Instructions
 

  • Pour all ingredients into blender and blend until smooth.
  • Pour mixture into freezer safe containers. *Remember to leave room for drinks to expand as they freeze! I usually leave about 1.5-2 inches of headspace.
  • Place containers in freezer until solid. (Overnight at minimum)
  • When drinks are properly frozen they will be ready to pull out to thaw a bit and enjoy!

Notes

*I used freezer canning jars for my drinks, but any freezer safe container will do
*You can substitute other fruits for this recipe.  We do not recommend fruits like blackberries or raspberries with the high seed content.  Mango and banana would work great!
