Crock Pot Chicken Thighs (Honey & Garlic)

So easy and so tasty!

I don’t think that it is any secret that we are busy here at Tin Box. We do our best to focus on simplifying things in our life, and slowing down more and more, but many days when it is time to cook dinner we just don’t want to do it. I am most motivated in the first half of the day and try to prep dinner before it is even lunch time. If I could use my slow cooker every single day, I would. It makes my life so much easier, tastier and healthier. Instead of throwing together something quick and unhealthy, I am prepping proteins and veggies to enjoy a healthy meal without having to prepare it at dinner time. We love this simple chicken recipe in the crock pot, along with the sauce (a take on BBQ).

Slow cookers really simplify dinner prep!

Our slow cooker is one of my favorite tools in the kitchen and we love using it to prepare dinner in the morning and let it cook throughout the day. When I’m ready to sit down to dinner, it is as easy as scooping up this chicken and putting it on my plate. Just so easy! This recipe is even easier than normal, because there are so few ingredients! The ingredients for this dish are just chicken thighs, ketchup, honey, garlic, basil and Italian seasoning. We like to use bone-in, skin-on chicken thighs and because of that we buy them in bulk. If you are purchasing chicken thighs for this recipe, I think skinless is the way to go. It will allow the sauce to really soak it’s flavor into the chicken meat and less for you to pick through.

Just a few ingredients mixed together for this yummy sauce.

To prepare this recipe simply mince your garlic and mix with the ketchup, honey and basil. Place your chicken thighs in the bottom of the slow cooker and season with salt and pepper. Pour the ketchup mixture over the chicken thighs and add a few shakes of Italian season over the top. Cook on low for 6 hours, or until cooked to temp. That’s it! So simple!! Jorge made us these delicious stuffed potato balls in the air fryer to pair with the chicken (recipe to come), but this would be great with roasted veggies, a salad or rice.

Crock Pot Chicken Thighs

Honey Garlic

Equipment

  • 1 Slow Cooker

Ingredients
  

  • 1/2 cup ketchup
  • 1/3 cup honey
  • 3 cloves garlic
  • 1 tsp basil
  • Italian seasoning
  • 4-5 chicken thighs we used bone-in, skin on, but will lose the skin after cooking

Instructions
 

  • Mince Garlic, then whisk in with ketchup, honey and basil
  • Place chicken thighs in bottom of crock pot and lightly season with salt and pepper
  • Pour ketchup mixture over chicken thighs
  • Shake the Italian seasoning over top a few times.
  • Cook on low for 6 hours
