It is definitely that time of year for fresh apples and festivals that celebrate the orchards in our area. At nearly every local fair, market and festival you can find one of the local orchards selling apple cider. We picked up our own apple cider last weekend and decided to mix it into our weekly cocktail recipe!
I don’t remember a time in my childhood that I drank apple cider or really had anything apple besides cut up fresh fruit as a snack. I’m sure that I did, it just doesn’t strike any key memory moment in my past. That being said, I am not super excited about apples and don’t feel adventurous using them in the kitchen. Jorge loves apple desserts and I’m really trying to work them into our fall recipes. The motivation started when I walked by a booth at a craft show that we were in last weekend. A local orchard was selling apple cider and I felt that this would be a great way to start working with apples!
To make these crisp drinks fill champagne flutes with your desired level of champagne. While I appreciate good champagne, I just use the cheapest when making mimosas. I prefer extra dry and tend to purchase the bigger bottles because Jorge likes champagne as well. We tend to fill our glasses half-way to two-thirds of the way full with champagne. Then pour the apple cider in to top off the glass. SO easy!! We added fresh rosemary as a garnish, but you can also add a thin slice of fresh apple if you like.
I was a little nervous to taste this mimosa, but the drink was delicious! It was light, fresh and crisp and a great drink to enjoy before the weather turns too cold. It is a great way to celebrate fall and honor the apples that are in season now!
