Santa Fe Chicken

I love when I can prepare meals ahead of time. I really love when I can make a meal for dinner and double it to freeze the same meal for another dinner. I’m not against freezer meals purchased from the grocery store, but I definitely prefer to know what I’m eating. As we get closer to our daughter’s arrival, stocking the freezer with easy dinners has climbed the priority list. This chicken dish is easy to prepare, store and make when ready!

I make this recipe more than I probably should. It is seriously so so easy and so so good. It’s simple, and when served over rice with veggies it nutritious and tasty. Hits all 3 of my needs for a good dinner!

To make this freezer meal I usually purchase a value pack of chicken breast from the store when it is on sale and prepare several at one time. Simply place the chicken, sliced into strips, in gallon sized freezer bags and set aside. Mix up the marinade and pour into the bag with the chicken. Remove as much air as possible and label the bags with the recipe name and date as you put these bags together. I like to lay the bag, being saved for later, flat in the freezer to save space and move to our deep freezer when set.

When you are ready for a quick and healthy dinner, pull the bag from the freezer in the morning. Let thaw completely and stir in white wine if you’d like. The alcohol will burn off, but the flavor will be intensified. Place the mixture in a square baking dish and into a preheated oven at 350 for forty minutes. SO easy!

Ingredients
  

  • 1/2 cup lime juice
  • 1/4 cup soy sauce
  • 1 tbsp olive oil
  • 1 1/2 tsp chili powder
  • 1 tsp cumin, ground
  • 1 1/2 tsp coriander, ground
  • 3 tsp garlic, chopped
  • 1 tbsp honey
  • 2 chicken breasts, sliced into strips
  • 2 tbsp cilantro, fresh and chopped
  • 1/4 cup white wine optional

Instructions
 

  • Mix all ingredients together except white wine, then pour into a gallon sized freezer bag. Make sure to label and date before placing in freezer.
  • When ready to eat, thaw package. Preheat oven to 350. Stir in white wine, if you are using. Grease a square baking dish and pour ingredients in the pan. Cook in the oven oven for about 40 minutes.
  • Serve this delicious and easy dish with rice and veggies for a filling and nutritious meal.
