Sausage & Veggie Sheet Pan

Easy and healthy dinner!

As we move into a very busy season of our year it is important to me to keep dinners simple, but still as healthy as possible. Sheet pan dinner are a great way to save time, dishes while still being able to add ingredients that you like and want. Let’s see what we put in this one!

For this sheet pan dinner we used sausage purchased in a value pack on sale. I think I paid five or six dollars and was able to separate the coil into three dinners. Not bad, huh?! I love when deal like that pop up! I simple divide the original piece and vacuum seal three different packages to freeze. I pull packages from the freezer the night before so that it can thaw out and be ready to go for dinner. A bit of planning saves a lot of time and money!

To prepare this dish, I preheat the oven to 400 degrees and cook the sausage through. If you purchase sausage already cooked, you do not need to do this, but browning the sausage improves the flavor of the dish. Let the sausage cool while you prepare your veggies. When I cut veggies, I try to think of how I’d like to eat them. I don’t want to cut veggies after they are cooked, so I do it before hand. Cut your veggies into bite-sized pieces and make sure they are all similar and uniform in cuts so that they cook through evenly. For this sheet pan we used broccoli, bell peppers, Brussels sprouts , zucchini, mushrooms and tomatoes. Other vegetables that would work well in this dish would be sweet potatoes, onions, spinach, carrots and any other vegetable that you can think of. We love veggies here in our home and tend to include a wide variety in our meals.

Once all veggies are cut, slice the sausage into bite-sized pieces. Place the sausage, some minced garlic and the veggies onto a sheet pan. Drizzle the olive oil over the tray, then sprinkle with Italian seasoning and salt and pepper. Bake for about twenty minutes and make sure to mix up about halfway through. We like to eat this dish over pasta, but rice works too! This would make a great sandwich on a sub roll or even just on it’s own. If you are a cheese person sprinkle a bit of shredded mozzarella or some Parmesan to finish.

Jorge prefers Parmesan, but I love shredded mozzarella.
