This time of year is the busiest for many. Back to school time, sports practices and games, plus homework, social events and more. Dinner is the last thing on everyone’s mind, so let’s add some slow cooker recipes to the mix! I’m a huge fan of these as well, even without the busy schedule. I like preparing dinner in the morning and enjoying it at night. Cleanup tends to be easier with slow cooked meals and there is usually leftovers for lunch the next day. So many benefits to slow cooked meals!
This recipe is super easy and needs just a little prep. The main part of the meal is the chicken, and what is easier than sprinkling with dry soup mix and calling it a day?! So easy! I’m a huge fan of onion soup mix and actually use it quite a bit in our meals. I really should figure out how to make that myself. I will add that to the list for sure. Want to make the chicken even tastier?! Start this dish the night before and add the chicken and some salt to a plastic bag. Sprinkle in a solid dash of salt and let it sit overnight. Brining, what this is, really helps the chicken keep its moisture while cooking and make dinner that much better!
The other ingredients in this slow cooker meal are: mushrooms and peas (duh!), water, onion and garlic. This dish is super easy and can be served on its own, or with some sides like rice, pasta or a side salad. You can always add more veggies to the slow cooker as well to make life that much easier. Potatoes would work great! Just keep an eye on the water level.
To make this meal, simply lay the chicken in the slow cooker and coat with onion soup mix. I use half the packet, then flip the chicken and finish it off. Press the mix into the chicken so that it sticks. It brings a lot of flavor to the dish! Then add in everything but the peas and cook on low for 4-5 hours. Check to make sure the chicken is cooked to temp and then add in the peas to cook with everything for about ten minutes. That’s it! Such an easy and delicious meal to enjoy any day of the week. It is perfect for comfort during the week or to gather the family around the dining room table on a Sunday.

Slow Cooked Chicken, Mushroom & Peas

- Slow Cooker
Ingredients
- 4 chicken breast
- 1 onion soup mix pack
- 1 cup water
- 8 oz mushrooms, sliced
- 1 onion, chopped
- 4 garlic cloves, minced
- 2 cups frozen peas
Instructions
- Place the chicken in your slow cooker and pour in onion soup mix. Make sure to press into chicken so that it sticks. Add in the water, mushrooms, onion and garlic
- Cover and cook on low 4-5 hours, until chicken is cooked through. Stir in peas, cover and cook another 15 minutes.
