Slow Cooker Garlic-Ranch Potatoes

Our crock pot is my favorite kitchen tool

I am a huge fan of using the crock pot for dinner, even the side dishes! Sometimes it is easier to make the main dish and get discouraged from cooking because of the side dishes. This happens to me a lot. We recently made roast beef, but I was just so busy that day, that I didn’t want to worry about side dishes when it was ready to plate everything. I decided to go with a steam bag of peas and these amazing slow cooked potatoes! So easy to prep things earlier in the day and after a long day of work and driving to just put something in the oven and scoop up some deliciousness out of the crock pot.

You don’t need a fancy slow cooker, we use a basic crock pot with simple low, high and keep warm settings. Click here for the one we have: https://amzn.to/3cRmO4v. For this recipe we used red potatoes, but you can use whatever type of potatoes you like. Just make sure to cut into cubes so they cook evenly and you can easily eat them without extra effort. Spray the crock pot with non-stick spray and place the potatoes into the slow cooker then add the butter, olive oil, ranch seasoning, chives, minced garlic and salt and pepper. SO EASY!

Prep the spices to make dinner prep easier

Cook on high for 3-4 hours. Do not open the lid, no matter how hard it will be. The smell is amazing and you will want to taste test right at 3 hours. This is a great side dish for many proteins, but we really enjoy it with roast beef or steak. I photographed early, but we also include green veggies and this particular meal had peas added to the plate.

Ingredients
  

  • 1 pound red potatoes washed, and cut into bite-sized pieces
  • 1 tbsp butter
  • 1 tbsp olive oil
  • 1/2 oz ranch seasoning
  • 1/2 tbsp chives
  • 1/2 tbsp garlic
  • salt & pepper

Instructions
 

  • Spray your slow cooker with non-stick spray.
  • Place all ingredients into slow cooker and stir to combine.
  • Cook on high for 3-4 hours.
