Vanilla Extract

Have you purchased vanilla extract lately? No, I don’t mean the imitation stuff in the baking aisle. I mean the real and pure vanilla extract. If you haven’t I am here to tell you that it is expensive. I could put a quarter tank of gas in my truck for what quality vanilla extract costs in the stores. So nuts! When I realized how expensive extracts were, I realized that it was just better to make them myself.

I started with vanilla extract and usually make 2 large batches a year. I keep some for myself and give away some as well. May and June are the best times to make vanilla extract so that it is ready in time for holiday baking!

To make vanilla extract you want to start with quality vanilla beans. Personally, I like Tahitian beans, but you can find Madagascar and other locations where they are grown. Simply cut up your beans into small pieces and add to a jar. (weigh them first if your beans don’t come in specific weight). Then add about 8 ounces of vodka to every one ounce of beans. I use cheap vodka…the cheaper the better. Note: Many prefer using organic vodka, but my point is to save money. It will not affect the outcome by using cheap vodka.

Once both ingredients are in a jar, cover and shake. Store your jar in a cool, dark place and remember to shake once a week or so. In about 5-6 months you will have an amazing extract to bake those holiday cookies with or to give away as gifts!

Note: You will notice a full bean in my jar in the photos. I tend to keep at least one bean in tact so that I can add it to a gifting jar for a little special flare. If you are making the extract for yourself it is better to just chop it all up to get all the flavor from those beans.
