Slow-Cooked Asian Chuck Roast

Chuck Roast is a pretty inexpensive cut of meat that is delicious.  We slow cook it in different ways to get different flavors, or just with a simple seasoning of salt, pepper and garlic powder.  No matter which way you slow cook this meat, you are sure to have a delicious dinner (and future lunches and snacks) on its way for you.  We went with an Asian seasoning and sauce blend to make up some great variety with our upcoming meals.  

Slow cooking is one of our favorite ways to prepare a meal.  You simply load everything into a crock in the morning and by dinner time you have a delicious meal with little to no effort.  These types of meals are ideal for busy days out of the house, or the end of long work week. I also enjoy making these low and slow meals on Sundays so that the aroma fills the house as we are relaxing and watching football.  If you don’t have a slow cooker in your home, it is time to get on that!  This is the one we have (ours is an older version) and use regularly: slow cooker.

What makes this particular recipe Asian?  Well, the spices and sauces we used!  We used amino acids, brown sugar, sesame oil, garlic powder, red pepper flakes, ginger and pepper.  Amino acids are a healthier substitute for soy sauce and I promise if you use them, you won’t taste the difference.  That, mixed with the sesame oil and ginger, is what really stands out in this recipe and gives it an Asian feel.  If you’d like to add additional ingredients, green onion, red chilies, beef broth and rice vinegar would all be great additions to this recipe if you prefer them. 

To make this slow cooked dish, simply add in all of the ingredients, except the beef, into the slow cooker.  Make sure to stir together well.  Trim the beef of extra fat and add to the crock as well.  Make sure to turn the beef so that it is coated on all sides. All that is left is to cover and cook on low for about 8-10 hours.  SO easy!  Once time is up I shred the beef with this funny tool: shredder.

If you would prefer a thicker sauce to cover your shredded roast with, add a slurry of cornstarch and stir until thickened.  For a traditional meal serve the beef with rice and a veggie and don’t forget the sauce!  Other ways to enjoy this beef is under eggs for breakfast, in a tortilla as a taco, or in a salad.

  • Slow Cooker

Ingredients
  

  • 3 lb Beef Chuck Roast
  • 1/2 cup Amino Acids
  • 1/2 cup Light Brown Sugar
  • 2 tbsp Sesame Oil
  • 1 tsp Garlic Powder
  • 1 tsp Red Pepper Flakes
  • 1 tbsp Ground Ginger
  • 1/2 tsp Pepper

Instructions
 

  • Mix all ingredients, except beef, together in slow cooker. Add in beef and turn to coat with sauce.
  • Cover and cook on low for 10 hours
  • Remove and shred to use in a variety of ways. Remember to keep and serve the liquid!
