
Asparagus is an amazing spring vegetable. It is packed with many nutrients and very few calories. I especially like that is contains protein and fiber, but also love the taste as well! Not big on asparagus? Try breading it for some crunch and character! This tasty asparagus side dish is perfect for the soon to be in-season veggie. This recipe is both simple to make and delicious to eat. Add it to your dinner plans soon.

Gather your ingredients: fresh asparagus, egg, panko breadcrumbs, Dijon mustard, Parmesan cheese and salt and pepper. Preheat the oven to 400 and lightly grease a baking sheet. In a shallow bowl, beat the eggs with the mustard, then season with salt and pepper. I used a regular bowl, but to make it easier I would suggest a longer bowl or bread loaf pan. Choose something that is the size, or longer than the asparagus. In a second dish combine the bread crumbs and the cheese and mix to blend well. To make the breaded asparagus simply dip your asparagus in the egg mixture and shake off the excess liquid. Then, dip into the bread crumb mixture. Make sure that you are getting a good deal of breadcrumbs on all sides of the asparagus. Place each spear on the baking sheet as you bread them and once complete, bake for about 12-15 minutes in the oven. Bake until golden brown and if you have leftover, I highly recommend using an air fryer to reheat and keep that delicious crunch. While I did not use a dipping sauce, this would go great with one like aioli!

Breaded Asparagus
Ingredients
- 2 eggs
- 1/2 tsp Dijon Mustard
- salt and pepper
- 3/4 cup panko bread crumbs
- 1 lb fresh asparagus spears, trimmed
Instructions
- Preheat the oven to 400 and lightly grease a baking sheet
- In a shallow dish, beat the eggs and mustard then season with salt and pepper
- In another shallow dish combine the bread crumbs and cheese
- Dip each spear in the egg mixture, then drench in bread crumbs.
- Add each spear to the baking sheet and when finished, bake for 12 to 15 minutes or until golden brown and crispy.
