Breaded Asparagus

Ingredients
  

  • 2 eggs
  • 1/2 tsp Dijon Mustard
  • salt and pepper
  • 3/4 cup panko bread crumbs
  • 1 lb fresh asparagus spears, trimmed

Instructions
 

  • Preheat the oven to 400 and lightly grease a baking sheet
  • In a shallow dish, beat the eggs and mustard then season with salt and pepper
  • In another shallow dish combine the bread crumbs and cheese
  • Dip each spear in the egg mixture, then drench in bread crumbs.
  • Add each spear to the baking sheet and when finished, bake for 12 to 15 minutes or until golden brown and crispy.
