Ground Turkey Peppers

We have a lot of fun recipes heading your way, but in the spirit of New Year’s Resolutions, I wanted to stick to healthier ideas and some recipes that are easy to make ahead of time. I’m a big fan of making things earlier in the day, because come dinner time I am just not in the mood. Today we will talk about these great Ground Turkey Peppers! Not only can they be made ahead of time, they are sweet, filling and so so good.

Before worrying about the filling, it is important to prepare the peppers. Cut off the tops, trim the bottoms so that they sit flat and empty out the seeds. I rinse them and then place them in boiling water for about five minutes. We have made this recipe so many times and have tried it with and without boiling. Boiling them is definitely better. Place them on a plate or paper towel to dry while you start the filling.

Now it’s time to work on the filling. We LOVE this filling and if you notice, there are only four peppers in the photo. The recipe calls for six, but we like eating extra filling on its own. It is good. Heat up the oil, garlic and onion in a large pan. Saute until tender and add the turkey. Thoroughly cook the ground turkey until cooked through and broowned. Add in the crushed tomatoes, rice, seasonings and half a cup of shredded cheese. Stir until blended.

Now we can start stuffing peppers. Fill them up to the top and place them in a prepared baking dish or cast iron skillet. Bake uncovered for 25-30 minutes. Add the remaining cheese and bake for another five minutes.

Enjoy this healthy and delicious dinner. You can make this as early as a day ahead of time. If you do make it early, keep covered in the firdge and pull out about 30 minutes or so before putting it in the oven. Let us know what you think when you try this recipe. Ground Turkey Peppers

Ingredients
  

  • 6 large bell peppers all colors are great for this!
  • 2 cups rice we use white, but wild rice works well too
  • 1 lb ground turkey
  • 2 cloves garlic, minced
  • 1 small onion, diced
  • 1 16oz jar crushed tomatoes
  • 1 tsp Italian seasoning
  • 1 tsp salt
  • 1/2 tsp ground pepper
  • 1/2 cup shredded cheese choose your favorite!
  • shredded cheese for melty tops!
  • olive oil

Instructions
 

  • Preheat your oven to 350 degrees
  • Prepare rice and set aside (or start it so it is ready when you are)
  • Cut off the tops of the peppers, remove the seeds, trim the bottoms to help them sit flat and rinse thoroughly. In a large pot, boil the pepper for about 5 minutes and remove to drain upside down onto a plate or towel.
  • In a large skillet add the olive oil, garlic and onion. Saute until tender, then add the turkey. Stir until browned and cooked through.
  • Add the crushed tomatoes, rice, Italian seasoning, salt, pepper and 1/2 cup of shredded cheese. Stir until blended.
  • Fill the peppers evenly with the mixture, place in a lightly greased baking dish (or cast iron skillet). Bake uncovered for 25-30 minutes. Sprinkle remaining cheese to top and bake an additional 5 minutes, or until cheese is melted.
  • Serve and enjoy hot out of the oven!
