Preheat your oven to 350 degrees
Prepare rice and set aside (or start it so it is ready when you are)
Cut off the tops of the peppers, remove the seeds, trim the bottoms to help them sit flat and rinse thoroughly. In a large pot, boil the pepper for about 5 minutes and remove to drain upside down onto a plate or towel.
In a large skillet add the olive oil, garlic and onion. Saute until tender, then add the turkey. Stir until browned and cooked through.
Add the crushed tomatoes, rice, Italian seasoning, salt, pepper and 1/2 cup of shredded cheese. Stir until blended.
Fill the peppers evenly with the mixture, place in a lightly greased baking dish (or cast iron skillet). Bake uncovered for 25-30 minutes. Sprinkle remaining cheese to top and bake an additional 5 minutes, or until cheese is melted.
Serve and enjoy hot out of the oven!
