
Muffins are a great choice for a fast and healthy breakfast or snack. They are easy to eat, portable and can be healthy if prepared with nutritious ingredients. Life is busy and muffins are a great way to help with hectic mornings, snack time chaos and even as a quick snack after a workout or to grab for the road on the way to practices or games. Muffins are an easy and simple bake with easy ingredients you probably already have in your pantry.

As always, let’s gather those ingredients to make the recipe! For this recipe you will need whole wheat flour (you can use all purpose, but we like the whole wheat for added nutrition), baking soda, salt, cinnamon, ground flax seed, 2 ripe bananas, cottage cheese, butter, 2 eggs, maple syrup and vanilla extract. Flax seed isn’t something everyone has in their pantry, so you can always use these substitutes: chia seeds, psyllium husk, oat bran or even applesauce.
To make these muffins simply mix all of your dry ingredients in one bowl and the wet ingredients in another. I put the wet ingredients into my stand mixer for even more convenience and mixed until they were combined well. Slowly add your dry ingredients into the wet ingredients and remember to stir until all ingredients are mixed together well. Simply scoop the batter into your greased (or lined) muffin tins and bake at 350 for 25 minutes. Not sure if they are done? Stick a toothpick in the center and if it comes out clean, they are ready! If there is still batter on the toothpick stick them back in the oven for another five minutes or so and try again until they are done.
Some tips for muffins:
- Use overripe bananas for maximum sweetness
- Don’t over mix the muffin batter to ensure light and fluffy muffins
- Store in an airtight container for up to 4 days, or freeze them for later
- Add your favorite ingredients to this batter for even more nutrition & flavor
- Diced Strawberries, chocolate chips and blueberries all work well!
- Serve with a little nut butter or Greek yogurt for extra protein
- For a hot breakfast, serve warm with a drizzle of honey or bit of butter.

Banana Protein Muffins
Ingredients
- 1.25 cups whole wheat flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon
- 3 tbsp flax seed, ground
- 2 bananas, ripe
- 1 cup cottage cheese
- 1/4 cup butter, melted
- 2 eggs
- 1/4 cup maple syrup
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350 and prepare your muffin tin. I like to grease mine, but you can also place cupcake liners if you'd prefer.
- Mix all the dry ingredients together into a bowl. Add all wet ingredients in a different bowl (I used my stand mixer) and mix. Continue mixing while adding in the dry ingredients until combined.
- Scoop the batter into the muffin tins and bake for 25 minutes, or until a toothpick in the center comes out clean.
