Banana Protein Muffins

Healthy breakfast on the go, or snack for the whole family

Ingredients
  

  • 1.25 cups whole wheat flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 3 tbsp flax seed, ground
  • 2 bananas, ripe
  • 1 cup cottage cheese
  • 1/4 cup butter, melted
  • 2 eggs
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract

Instructions
 

  • Preheat oven to 350 and prepare your muffin tin. I like to grease mine, but you can also place cupcake liners if you'd prefer.
  • Mix all the dry ingredients together into a bowl. Add all wet ingredients in a different bowl (I used my stand mixer) and mix. Continue mixing while adding in the dry ingredients until combined.
  • Scoop the batter into the muffin tins and bake for 25 minutes, or until a toothpick in the center comes out clean.
