Banana Protein Muffins
Healthy breakfast on the go, or snack for the whole family
- 1.25 cups whole wheat flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon
- 3 tbsp flax seed, ground
- 2 bananas, ripe
- 1 cup cottage cheese
- 1/4 cup butter, melted
- 2 eggs
- 1/4 cup maple syrup
- 1 tsp vanilla extract
Preheat oven to 350 and prepare your muffin tin. I like to grease mine, but you can also place cupcake liners if you'd prefer.
Mix all the dry ingredients together into a bowl. Add all wet ingredients in a different bowl (I used my stand mixer) and mix. Continue mixing while adding in the dry ingredients until combined.
Scoop the batter into the muffin tins and bake for 25 minutes, or until a toothpick in the center comes out clean.
