Hobo Foil Packs

Camping is something we do often and get out as much as possible. We drive with our camper, rather than fly, when we need to travel, take weekends away at a moment’s notice and take advantage of military training events by using campgrounds instead of hotels so that I can tag along with the dogs (we are doing just that as I write this post). We have a travel trailer that has a full kitchen, but we still prefer eating dinner over the campfire and utilitize some great recipes to get the most out of eating over the fire.

Hobo packs were one of the first recipes I tried when Jorge and I started camping together and has stayed in the rotation because they are just so easy and can be mixed with whatever is in your fridge/freezer. I prefer a sausage and potato base, but you can use almost anything and it will taste great!

For the sake of filling out this recipe card, I made my favorite mixture of ingredients: Beef sausage, potatoes, carrots, tomatoes, peppers and onions. The seasoning I make for this is a mix of Italian seasoning, basil, parsley, garlic powder, thyme and paprika.

This very simple recipe has even simpler instructions: Mix all ingredients together and split into four parts. Each parts gets placed on sheet of foil, add some butter and seal. Place on the grate about a foot above the hot coals and off the flame, then let cook for about 10-15 minutes. Flip and cook another 10-15 minutes. So easy.

Another bonus? You can make these ahead of time to save yourself the effort while away. If we head out for a weekend getaway these are a great recipe for dinner because you can make them and have them ready to be put on the fire at any time.

Our great was made by my Dad. He repurposed my baby crib and welded it into this amazing grate system!
