Oven Baked Country-Style Pork Ribs

We are always looking for ways to simplify dinner and this recipe brings all the flavor of a Sunday family dinner, with so much less effort! Looking for a nice spread with the hardest part of the recipe to be slicing an onion? This is a great recipe for you! We serve these amazing ribs with corn on the cob, green beans and cornbread. Coleslaw is another favorite side that compliments these items!

To make this meal, simply place a sliced onion (cut a bit thicker) in a casserole dish and add some water. I have measurements in the recipe, but I don’t follow them when preparing. Just make sure there is a layer of water that covers the bottom and comes up at least quarter of an inch.

Add salt, pepper and Italian seasoning to the ribs and cover with Dijon mustard. Again, I don’t measure. I just put a line of mustard on each rib and brush to cover. Do this to both sides and add to casserole dish over onions. Cover the dish with foil and add to the preheated oven for an hour.

When you timer goes off remove the foil and bake for another 30 minutes to bring the ribs some color and finish them. At this time get your cornbread in the oven if you haven’t made it previously. Get your green beans and corn cooking and you are pretty much ready for dinner!

This recipe is a great one to prep ahead of time as well. The ingredients are simple and the dishes are basic. To prep I simply slice an onion and put in a prep bowl, with cover, and refrigerate. I pull out all the dishes that I will need: casserole dish, large pot for corn, small pot for green beans and pie pan for corn bread. The corn bread is just the boxed Jiffy brand and seriously couldn’t be easier. I place the egg and measuring cup in a bowl and set aside for later. (If you really want to prep ahead of time, go ahead and make the cornbread while prepping your other ingredients!) You can also season and add the mustard to your pork chops ahead of time and stick in the fridge until you are ready to place in the oven, but I usually just do it at dinner time since it’s so easy. I use canned green beans and already shucked corn for dinner making it super easy dinner prep. You just preheat the oven, boil some water and set a timer. What is easier than that?

Baked Country-Style Pork Ribs

Ingredients
  

  • 2-2.5 lb country style pork ribs
  • salt and pepper
  • 1/4 cup water
  • 1.5 tbsp Italian seasoning
  • 1.5 tbsp Dijon Mustard
  • 1 med onion, cut into 1/4 inch slices
  • 1 tbsp fresh thyme leaves
  • 1 tbsp fresh rosemary, minced

Instructions
 

  • Preheat the oven to 350
  • Start by spreading sliced onions and herbs over bottom of 13×9 casserole dish. Add water
  • Salt and pepper the ribs on all sides. Brush mustard on ribs and sprinkle with Italian seasoning.
  • Place ribs on top of onions, then cover with foil. Bake for about an hour, uncover then bake for another 30 minutes.
  • Serve with onions and enjoy!
