Slow Cooker Shredded Fajitas

Looking for an easy dinner that will give you some pretty tasty leftovers?! This is the one for you!

Equipment

  • Slow Cooker

Ingredients
  

  • 1-3 pounds Beef Flank Steak
  • 1/2 cup Medium Salsa
  • 2 Tbsp Fresh Lime Juice
  • 1 Tbsp Chili Powder
  • 1/2 tsp salt
  • 2 tbsp chopped cilantro
  • 2 garlic cloves, minced
  • 1 tsp ground cumin
  • 1 onion, cut into strips
  • 1 red bell pepper, cut into strips
  • 1 green bell pepper, cut into strips
  • flour tortillas optional

Instructions
 

  • Cut flank steak lengthwise in half, then crosswise into thin strips. Place these strips into the slow cooker. Combine the remaining ingredients, less the peppers, and place in the crock pot and cover. Cook on low 5-6 hours.
  • Add bell peppers and cook another hour on low
  • Serve with flour tortillas

Notes

The steak pulls apart and makes a great addition to so many meals.  Serve with eggs for breakfast, on toasted bread for lunch or over some tortilla chips for a spin on nacho night.
Substitutions for flour tortillas could be corn tortilla chips, a bed of lettuce or even rice.
