Slow Cooker Chicken Bacon Ranch

And we are back with another super easy slow cooker meal! When it comes to dinner I only care about a few things: that the food is hot, the prep is easy and that it tastes good. I love salads more than most people, but I prefer not to eat them for dinner. I want a hot meal at dinner and something that will taste good. It is a perk when the meal was easy to prepare as well and this slow cooker meal is the perfect comfort food for that.

I prep all of my meals in the morning (as long as I don’t have to be out the door super early) and this meal was right up my alley for a busy afternoon and early morning prep. I start the whole process by cooking bacon. Probably my favorite dinner ingredient to make early in the day so I can have a nice treat with a weekday breakfast!

While the bacon is cooking, I start prepping my crock pot. First, add your chicken to the bottom of the crock pot and season with Ranch dressing seasoning mix. 1 ounce (a packet’s worth) is enough, but I have a shaker of this amazingness in a bottle and may be a bit heavy handed with it. After your Ranch attack, cube up a block of cream cheese and throw on top. Note: This will not fully melt while slow cooking, but don’t let it worry you. It will stir up nicely after you finish shredding and stirring.

When the bacon is done, make sure to let sit out to cool off. I put it on paper towels so that the extra grease will soak up. When cooled off, chop up and set in a container in the fridge until you are ready to finish the meal.

Think about what time you want to eat dinner and make sure to adjust your time and slow cooker settings to meet that time. I pull out the rest of my dinner ingredients so that I’m ready to go. This meal I went with egg noodles. It has been a hectic week, so some comfort food is just what I needed. Egg noodles are super easy to prepare making this full dinner easy and enjoyable.

When you are ready for dinner, simply shred the chicken and stir all crock pot ingredients together until super creamy. It only takes a moment. Sprinkle with those bacon pieces and serve over your pasta. So easy!

Slow Cooker Chicken, Bacon & Ranch

Slow cooker meals always make my life easier and this one is a simple way to have a delicious dinner with little ingredients and effort.

Equipment

  • Slow Cooker

Ingredients
  

  • 1-2 lbs boneless, skinless chicken breast
  • 8 oz cream cheese *I use low fat
  • 1 oz Ranch Dressing Seasoning *use more if you like!
  • 6 pcs bacon, cooked

Instructions
 

  • Place chicken in the slow cooker. Season with ranch seasoning and top with the cream cheese
  • Cook on low for 6-7 hours, or on high for 3-4 hours. Internal temperature of chicken should reach 165 F. The chicken will be able to easily shred when ready.
  • Shred the chicken and stir to allow the cream cheese to turn into creamy goodness with the chicken.
  • Sprinkle the top with pieces of the bacon

Notes

We serve over egg noodles, but this makes a great stand alone dish.  Would be great with onions, mushrooms and spinach as well!
