Make-Ahead Egg Sandwiches

I LOVE egg sandwiches and the only thing that makes it better is when I don’t have to make them in the mornings! When I have a little extra time, I prefer to make a healthy version of my favorite breakfast and freeze ahead for easier (and more tasty) mornings! These egg sandwiches are a great way to start any day and the ingredients are on point for healthy eating too! What’s better than that?!

As always, let’s get our ingredients together for an easier prep session. I use eggs, egg whites, cottage cheese, whole grain or whole wheat English muffins, turkey sausage patties and Colby jack cheese. Pull out a sheet pan and non-stick spray and a food processor while you are at it. I blend together the eggs, egg whites and cottage cheese with a little salt and pepper and bake in the oven while I prep the rest of my sandwiches. This is an easy way to multi-task and prepare a healthier version of the drive-thru sandwiches, at a much lower price.

Make sure to let the eggs cool before assembling. This will help everything from getting soggy. You can also mix up the ingredients to match your tastes. Sun-dried tomatoes, ham and Canadian bacon all make great additions to this sandwich. When you are ready to place in the freezer, I suggest wrapping in parchment paper first, then in foil. The foil helps protect against freezer burn, and the parchment paper is a great sleeve when heating in the microwave. I prefer to pull from the freezer and go straight into the microwave to defrost, then add to the air fryer or toaster oven for a bit to crisp up the muffin. This is a real treat for both kids and adults.

Make Ahead Breakfast Sandwiches

Ingredients
  

  • 6 english muffins *I used whole wheat muffins from Orowheat
  • 2 eggs
  • 1 cup egg whites
  • 1/4 cup cottage cheese
  • turkey sausage patties
  • Colby Jack cheese, sliced
  • salt and pepper to taste

Instructions
 

  • Preheat oven to 375.
  • Add cottage cheese to a food processor and blend until smooth. Add in your eggs, egg whites and salt and pepper. Pour onto well greased baking sheet or casserole dish. Bake for about 20 minutes
  • Assemble the remaining ingredients.
  • When eggs are cooked completely, let cool. Proceed to assemble your sandwiches, then wrap in parchment paper, followed by aluminum foil if freezing.
