Mexican Meatball Soup

Remember those meatballs from last week?! Well here is one of my favorite recipes to use them in! This soup is so delicious and even easier to prepare. It is a slow cooker recipe that will give you leftovers and enough to freeze for lunch another day! The meatballs alone make this soup worth making, but the whole bowl will have your mouth watering!

To make this slow cooker recipe simply combine all ingredients in a slow cooker and let cook on low 8-10 hours or on high for 3-4 hours. SO EASY!!! We use our own baked meatballs in this recipe, along with our homemade chicken stock. When our garden is hopping we can also use home grown chilies and tomatoes, plus our herbs from our indoor gardens! This makes our dinner mean even more!

We still have a few more years until we settle on a property for the long term, but are thoroughly enjoying all of the practice to get us there! One day we will have many gardens and animals and so much more to sustain us with the hope to only need a few things from outside our home. Until then, we will continue taking the small steps to learn, grow and understand different techniques to growing our own food and putting it together into these delicious and easy meals!

Mexican Meatball Soup

We love soup at Tin Box, especially this easy to prepare crock pot soup! We make the meatballs and broth ahead of time and add in other amazing canned goods for a fresh tasting and delicious dinner with little day of prep!

Equipment

  • Slow Cooker

Ingredients
  

  • 7 oz diced green chilies, canned
  • 30 oz diced tomatoes, canned
  • 32 oz beef broth
  • 32 oz chicken broth
  • 16 oz frozen meatballs
  • 1 med white onion, diced
  • 1/2 cup fresh cilantro, chopped
  • 1 cup white rice, cooked
  • 2 tsp oregano, dried
  • salt & pepper, to taste

Instructions
 

  • Combine all ingredients in a slow cooker and stir.
  • Cook on low 8-10 hours, or high 3-4 hours.
