Sheet Pan Ranch Pork Chops with Veggies

I’m sure I’ve said this a million times, but one more time won’t hurt anything so… I hate making dinner at dinner time. I’m never in the mood and I just don’t like doing it. My motivation for these type of chores runs thin by mid-afternoon, so I love when I can prep dinner before then. This is the perfect recipe for making dinner earlier in the day.

To start I prep all my ingredients earlier in the day. I make the marinade in a small dish that I have lids for. I make sure my pork chops are thawed out, or at least on their way. The veggies are the hardest part, but if you chop and slice them earlier in the day it is SO much easier and less annoying. I add my mix of veggies to a glass dish and cover in the fridge until it is time. If it is a week night meal, I also pull out the utensils and pans I will need so that preparing dinner is as easy as possible. For this meal it is just a sheet pan, tongs, a couple of spoons, small whisk and brush.

Okay, you have worked all day and maybe even went to the gym. You may have visited with friends or family, chased kids around the house, completed a project, spent time outside or even just feel drained from a long week. I get it, dinner is the last thing you really want to worry about tonight. The good news is that you prepared this all ahead of time! Whether you did it last night or this morning, dinner is already ready to go for you. All you need to do is mix the veggies and brush the marinade on the pork chops and throw it all in the oven. So great!

Sheet Pan Ranch Pork Chops with Veggies

Sheet Pan meals make life so much easier. Enjoy this delicious recipe with lots of veggies!

Ingredients
  

  • 5 tbsp olive oil
  • 2 tbsp Worcestershire sauce
  • 1 1oz pack Ranch dressing mix
  • 1 tsp pepper
  • 1/4 tsp salt
  • 1 zucchini, sliced
  • 2 bell peppers, sliced
  • 1 red onion, chopped
  • 1/4 cup brussels, sliced
  • 1/4 cup mushrooms, sliced
  • 2-4 pork chops
  • salt, pepper, garlic powder to taste

Instructions
 

  • Preheat oven to 475
  • Mix all wet ingredients with seasonings. Reserve 1/3 of marinade for the pork chops
  • place all veggies in a bowl and coat with the remaining 2/3 of marinade. Stir well
  • Season the pork chops with salt, pepper and garlic powder and brush with the marinade you set aside
  • place veggies on the sheet pan and bake for 10 minutes. Add pork chops on separate sheet and cook both sheet pans for 10-15 minutes.

Notes

Choose different veggies if you’d like!  This marinade will work with most veggies that taste good when cooked in the oven.
