Slow Cooker Recipe

We made this recipe most recently while camping. I try to use the slow cooker at least once a week when we are away because it allows to spend less time preparing meals and more time enjoying the area we are in. This time Jorge made the meal, which makes it even more relaxing for me!

This recipe was made for “Taco Tuesday” and is a spin on Fajitas. When you slow cook meat it is more likely to shred and makes a great addition to a flour tortilla. This recipe is no different and these shredded fajitas were enjoyed in different ways for days. The original recipe starts here.

Ready to make some slow cooked, shredded fajitas? Find the measurements on the recipe card and follow these VERY EASY instructions

  • Cut flank steak lengthwise in half, then crosswise into thin strips. Place these strips into the slow cooker. Combine the remaining ingredients, less the peppers, and place in the crock pot and cover. Cook on low 5-6 hours.
  • Add bell peppers and cook another hour on low
  • Serve with flour tortillas

Slow Cooker Shredded Fajitas

Equipment

  • Slow Cooker

Ingredients
  

  • 1-3 pounds Beef Flank Steak
  • 1/2 cup Medium Salsa
  • 2 Tbsp Fresh Lime Juice
  • 1 Tbsp Chili Powder
  • 1/2 tsp salt
  • 2 tbsp chopped cilantro
  • 2 garlic cloves, minced
  • 1 tsp ground cumin
  • 1 onion, cut into strips
  • 1 red bell pepper, cut into strips
  • 1 green bell pepper, cut into strips
  • flour tortillas optional

Instructions
 

  • Cut flank steak lengthwise in half, then crosswise into thin strips. Place these strips into the slow cooker. Combine the remaining ingredients, less the peppers, and place in the crock pot and cover. Cook on low 5-6 hours.
  • Add bell peppers and cook another hour on low
  • Serve with flour tortillas

Notes

The steak pulls apart and makes a great addition to so many meals.  Serve with eggs for breakfast, on toasted bread for lunch or over some tortilla chips for a spin on nacho night.
Substitutions for flour tortillas could be corn tortilla chips, a bed of lettuce or even rice.
